I've worked with the great and the not-so-great. But mostly I've worked with men and women who loved their profession, and who like me, had kids to raise and houses to pay for.
Obviously, I'm at the beginning of my career, contrary to what anyone else thinks. I'm 19 years old. In any other country, everywhere else, you're a prospect. And that's what I am right now in Europe. I'm a prospect. I'm not a seasoned veteran.
I always have a good quality extra virgin olive oil. A cheap quality oil will end up cheapening your dishes. And I love sweetening my dishes with maple syrup. It has a bit of a bitter kick at the end that works wonderfully in savory dishes.
